1 stick butter
1 1/2 c sugar, cream together and then add:
2 eggs well beaten
2-3 bananas- mashed
1 c sour cream
1 tsp vanilla
2 c flour
1 tsp baking soda
1/2 tsp salt
Mix well, pour into a greased jelly roll pan. Bake for 20-23 min at 350. Let cool then add frosting which is:
4 oz cream cheese-softened
1/4 c butter
1 tsp vanilla
2 c powdered sugar
Whip until fluffy and add a couple tsp milk to thin out to spread.
Pico De Gallo -Tandem
7 tomatoes
1 purple onion
1 jalapeno
1 bunch cilantro
1/4 c oil
1/2 c white wine vinegar
1 tsp salt and pepper to taste
Tortilla Crunchy Strips -Tandem
Cut up corn tortillas into strips
layout on baking sheet and drizzle with oil. Sprinkle with salt and pepper. Bake at 350 for 12-15 min.
Cafe Rio Rice -Tandem
3 c water
4 tsp chicken boullion
4 tsp minced garlic
1/2 full bunch of cilantro
1 can green chilies
3/4 tsp salt
1 Tbsp butter
1/2 onion
3 cups instant rice
Blend cilantro, green chilies, and onion in a food processor. Bring water to boil and add all ingredients. Simmer 30 minutes while covered.
Tomatillo Ranch Dressing -Tandem
1 pkg buttermilk ranch-make as directed
1/2 bunch cilantro
1 garlic clove
juice of one lime
1 jalapeno
2 tomatillos
Place all ingredients in a blender until smooth. Chill for at least one hour.
Chicken Salsa for Wraps- Melanie
1 bag of chicken breasts
1 large salsa bottle
Defrost chicken and place chicken and salsa in crock pot. Cook for 6 hours. When done, shred chicken with a fork. Serve with lettuce, tomatoes, cheese, sour cream in a tortilla.
German Pancakes-Melanie
6 eggs
1 c milk
1 c flour
1/2 tsp salt
5 Tbsp butter
Melt butter in 9x13 pan in hot oven. Mix eggs, milk, flour and salt. Remove pan from oven and pour in batter. Bake at 450 for 15-20 min
Homemade Ice Cream- Erika
3 c mashed fruit
3 c sugar
juice of 1 lemon
juice of 1 orange. Mix together and let sit for 1-2 hours at room temp then add:
1 pint whipping cream, 1 can condensed milk, 1 quart whole milk, 1 tsp amond extract for peach ice cream. Place in ice cream maker with rock salt and ice on outside.
Jello Salad-Erika
1 small box tapioca pudding-not instant
1 small box cook and serve vanilla pudding
1 small box flavored jello- whatever flavor you are doing
3 cups cold water. Mix in a pot on stove and let it come to a boil. Boil for one minute then remove from heat. Place jello mixture in fridge over night to set. Once set, add the following to jello mixture: Cool whip (10-12 oz) and sliced fresh fruit (whichever flavor jello you used). I have made raspberry, strawberry, and peach.
White Pasta Sauce-Michelle
1 med. onion,diced 1 qt. whipping cream
Extra virgin olive oil 2/3 c. flour
Fresh parsley, chopped Salt to taste
3 zucchini, quartered lengthwise
and cut into small chunks
My nephew learned how to make this in Italy. This recipe is not exact so you may have to try it and adjust it until it is right for you(ex. I only use 1/3c flour, dry parsley and substitute 1/3 of the whipping cream with milk). First, put diced onion in a med. saucepan and coat with olive oil. Add a large handful of chopped parsley and stir together. Cook in center of pan, on low heat, with lid on. Stir occasionally, keeping onions from browning. When onions are soft and clear, add zucchini and continue to cook on low, but leave lid off. Hand whip whipping cream and flour until smooth. When zucchini are nearly cooked, add whipping cream mixture. Turn up heat and cook with lid off, stirring occasionally. the sauce will thicken a little more as it cooks. Add salt to taste. Serve over your favorite pasta and sprinkle fresh parmesan cheese on top.
Teriaki Chicken -Annie
This is the way I make it at home. It's a little zippier. At Lake Powell, for that large of a group, we just used the soy sauce and sprite. We totally guessed on the combination :)
1 C Sprite
1/2 C Soy Sauce
1 tsp Horse Radish
1/2 C Olive Oil
5-6 Chicken Breast or tenderloins
Cut chicken breasts in half. Marinade chicken in remaining ingredients for 8-24 hours (I think 24 for is too long. It makes it too salty. I prefer 8-12) Grill 8 to 10 minutes on each side.

Asian Chicken Wraps--Stacey E.
1 bag mixed lettuce or spinach1 bag grilled chicken (cut up)1 yellow pepper 1 tomato1 cucumber1 carrots sliced smallpeanut sauce (start with just a little, it is pretty strong)Cut up veggies and mix all ingredients together. Serve on tortillas. You can also add any other veggies that you like. I have tried squash, onions, and a couple other that are pretty good.
Southwestern Pasta Salad--Annie
1 box bowtie pasta
1 can corn (drained)
1 can black beans (rinsed and drained)
sliced olives
grape tomotoes (halved)
3 to 4 chicken breasts cooked and cubed (I left this out because we were serving chicken for dinner)
Cook pasta, add other ingredients toss with dressing
Dressing: 1/2 Cup apple cider vinegar, 1/2 Cup oil, 1 pkg Hidden Valley Fiesta Ranch powder.
